The Rebel's Pour is a project that I started while in Ireland for my study abroad. While in Ireland, I deep dived into the drinking culture and what made Irish Whiskey so special. In my research, I found a story of a local man in County Mayo who ran his own Sibin. This led me down a rabbit hole into Sibins and led me to discovering Poitin and the connection to distilling traditions that were brought over to the United States by Scots-Irish immigrants. Connecting Irish history to Moonshining culture, The Rebel's Pour is a modern-day spirit of rebellion that started ages ago.
